Question For A Cook - Blue Garlic?

I will admit that I am not the greatest cook, nor the most creative in the kitchen (unless it is baking) which is why I am desperately searching new recipes with my new "Finish It Up Friday" blog feature but today I seem to be having a real problem...

I am in the middle of making this wonderful recipe for Barbecued Pulled Pork that I found on the awesome blog - A Year of Slow Cooking. I just peeked through the lid of my Crock Pot and saw something blue...shocked and a little nervous I removed the lid.
After closer examination, I soon realized that it was the two cloves of minced garlic that I added at the last minute, which is the only thing that I did different from the original recipe.

I scooped them out as I was afraid of poisoning my family, but does anyone know why this happened??!?! It was fresh garlic that I bought this morning...

I just asked my husband who cooks, and he said it is a chemical reaction between the acid in the vinegar, the fat in the pork, and the oil in the garlic, although he thought it'd be more green than blue.

Thanks Michie for checking with your husband. I just left a message over at your blog - it is a bit green now that I look at it in better lighting - I do hope that my next posting is not about food poisoning.

I asked him if he thought it'd be ok for you to eat it, and he said he thought it should be fine. I went to the recipe and read all the ingredients to him, and as soon as I got to vinegar, he said, "that'd do it!" I wouldn't have known that either!
